FRESH MEX SKILLS - DAY 1

Let’s get cooking!

Over the next two weeks, you’ll embark on a gastronomical adventure. It's one of the culinary skill courses that focus on a particular region's cuisine. You’ll explore the origins of modern Mexican cooking, and learn about the history and heritage of the ingredients and flavors that define it. And of course we’ve modified our recipes to adhere to the (at times) strict eating habits you’ve come to expect from Kenzai.


We’ll teach you to feel confident and comfortable in the kitchen dealing with these new and exciting flavors.

By the end of this course, you'll walk away with the following:

  • An understanding of how Mexican flavors are used. We’re talking herbs, spices, fruits, vegetables and proteins. We’ll give you the run-down on how these elements come together to create something magical!

  • Easy recipes to make at home. You'll be making a light easy-to-prepare appetizer, some larger courses, and a few important staple techniques along the way.

  • A baseline knowledge. Chefs train for years to learn the intricacies of a region’s cuisine. We'll provide a foundational level of knowledge which you can build and improve upon in the years to come.

You'll start slowly and work your way towards more involved dishes. On Day 5, we’ll give you a shopping list with some staple ingredients--spices, grains... mostly non-perishables. On Day 11, you'll shop for fresher ingredients--herbs, proteins and produce. You can expect to start cooking as early as Day 6. You’ll also be cooking on Days 7, 10, 12 and 13 - so plan accordingly. 



As always, blogging is encouraged. This is our first attempt at a culinary course, so your feedback is crucial - and as Members, we’re especially keen to hear about your experience.

Photo evidence of your at-home adventures slicing, dicing and working your way through this course is also encouraged. Instagram was invented for a reason, after all… namely, to share food photos (and puppy pictures).

For the first day of this course, we’re going to ask that you take to the blogs, and regale us with a story about your experience cooking, eating (or avoiding) Mexican cuisine. It could be a tale about the time you sipped a smoky Mezcal by a beachside campfire on the Baja Peninsula. Or maybe it's the time you took too many tequila shots and ate an entire plate of nachos at your local pub.
